Pass the Pierogi, Please

“Table for two, right. Can we take your name, it’ll be 45 minutes to an hour wait for breakfast.”
In case you haven’t heard, breakfast is the new dinner. It’s practically unheard of not to go to brunch on the weekends. And with so many great places to choose from, who wouldn’t want to leave the house? But then again, after waiting an hour for a Denver omelet, you might start to feel a little absurd (not to mention grumpy, and slightly dizzy).
Well, can you keep a secret? Eggcredible Café, tucked away in the Days Inn Hotel in South Boulder is well worth the drive. (And by not waiting for a table, you’ll end up eating sooner anyway).
First of all, you’ll feel like a hero for “finding” such a covert local. Second, you won’t be able to stay away. You might even stalk the chef (imported from Poland) for his outstanding handmade pierogi recipes. If dumplings aren’t your thing, then you’re sure to obsess over the benedicts, which have homemade hollandaise sauce.


The restaurant itself is an ode to a quaint Polish mountain lodge. From the Polish made curtains and the framed pictures of Poland, to the Polish tour guides and visitor books, you might accidentally escape to Eastern Europe for a morning.
They’re even environmentally conscious here, recycling their vegetable oil (and those of other restaurants) into biodiesel, using their own processor. As if you needed another reason to become hopelessly devoted.
